Coca Cola Thick Barbecue Sauce




2 med. size onions, chopped fine



3/4 c. Coca Cola Classic



3/4 c. ketchup



2 tbsp. vinegar



2 tbsp. Worchestershire sauce



1/2 tsp. chili powder



1/2 tsp. salt




Instructions
Combine ingredients in a saucepan and bring to a boil. Reduce heat and simmer, covered for about 45 minutes, or until sauce is very thick. Stir occasionally. Yield: 2 cups.

Rhubarb Oatmeal Bars.


Crust:
1/2 cup chopped nuts
1 1/2 cups rolled oats
1 cup brown sugar
1/4 teaspoon salt
1 1/2 cups flour
1 cup shortening
1/4 teaspoon vanilla

Filling:
3 cups chopped rhubarb
1 1/2 cups sugar
2 tablespoons cornstarch
1/4 cup water
1 teaspoon vanilla

Instructions
Make crust: Combine all ingredients until crumbly. Pat half of mixture into 13 x 9 inch baking pan. Make filling: In saucepan combine rhubarb, sugar, cornstarch and water. Cook until clear. Blend in vanilla. Pour over crust. Sprinkle with remaining crumb mixture. Bake at 350 degrees F for 20 minutes.

Rhubarb Crisp



3/4 cup uncooked oatmeal
1/2 cup butter, melted
1 tsp cinnamon
1 cup brown sugar, packed
4 cups diced rhubarb
1 1/2 cups sugar
4 TB cornstarch
1 cup water
1 tsp vanilla


Instructions
Mix flour, oatmeal, butter, cinnamon and brown sugar. Press half into greased 9" pan. Cover with rhubarb. Combine sugar, cornstarch, water and vanilla in a saucepan. Cook until thick and clear. Pour over rhubarb. Top with remaining crumbs. Bake at 350 degrees for 50 to 55 minutes.

Italian Style Scrambled Eggs


8 eggs
1/4 tsp salt
dash pepper
3/4 tsp dried basil leaves
1/4 cup light cream
3/4 cup grated sharp cheddar
2 tbsp butter3 tomato slices
3 green pepper rings
8 slices crisp cooked bacon

Instructions
Beat eggs, salt, pepper, basil and cream in a medium bowl. Stir in the cheese. Heat butter in medium skillet over low heat. Pour in egg mixture. As the eggs start to set at the bottom, gently lift the cooked portion with a spatula and letting uncooked portion flow to the bottom of the pan. Eggs should be slightly soft and cheese melted. Cook until set. Turn eggs onto serving platter and top with tomato slices. Cover tomato slices with pepper rings and then break the bacon strips in half and place in criss cross pattern over top of green peppers.

Crockpot Pepper Steak


2 pounds lean round steak
2 green peppers, sliced thin
2 tablespoons dried minced onions or 1/2 medium onion
1 cup low fat beef broth
2 tablespoons low sodium soy sauce
1/2 teaspoon ground ginger
1 minced garlic clove
1 teaspoon Worcestershire sauce

Instructions
Cut the steak into serving size pieces. If desired you can brown the meat in a little hot oil before adding to crockpot. Place the thinly sliced pepper rings in bottom of crockpot, reserving a few to place on top of meat if desired. (Vegetables
cook better when placed on bottom of pot.) Arrange the meat on pepper, careful to not stack one piece directly on top of another. Mix all other ingredients and pour over meat and peppers.
Cover and cook on low for 8-10 hours or on high for about 4 hours. Serve with mashed potatoes and simply seasoned vegetables.

Texas Hash



1 lb. hamburger1
lg. Spanish onion
1 can tomatoes
1 lg. can corn1
lg. green pepper
2 tbsp. Worcestershire sauce
Instructions
In large skillet, brown hamburger, onion (chopped) and green pepper. After browning, add can of tomatoes, 1/2 cup rice and Worcestershire sauce. Let come to a boil. Bake 45 minutes at 350 degrees in casserole dish.

Crock Pot Goulash



4-5 potatoes, peeled & chopped in bottom of crock pot
1 med. onion, chopped
1-2 sliced carrots
Corn
Peas
1 lb. hamburger
Salt & pepper
1 can tomato soup
Instructions
Starting with potatoes layer vegetables in crock pot. (You may use frozen vegetables but you will need to add about 1/2 cup water.) Place raw hamburger on top of vegetables and top with the tomato soup. Cook on high 4-5 hours or low 6-8 hours.
